Pizza in Sicily

Thick Pizza Squares PalermoThis blog post is for my friend Nels. He wanted to know about pizza in Sicily. First, you can get slices of pizza in Sicily all over the place. There are street vendors with small carts that sell pizza by the slice. It’s always thick pizza and it rarely has more than one topping. There are also lots of shops that sell pizza. Most of the gelato vendors, and there are lots of them, also sell pizza by the slice. They usually have a shelf or two with a variety of pizza. Again, most of them have one, two, or three items on the pizza. Vegetable dominates meat pizza. Very few of them are have more than one or two items on them. Italians seem to think pizza is better without a lot of stuff on it. Pizza is also usually thick. You see very little thin crust, although you do see some. What you really have to understand is that the businesses are at street level and they are small, mom-and-pop style stores. There are several in a block. That means you get lots of stores. There are many convenience stores, gelato stores, bakeries, and little hole-in-the-wall snack shops. In a city like Palermo, there would be thousands of them. Most of the types I just mentioned would probably sell some pizza. They might sell one pan or they might have several pans of several types. If they don’t sell out today, it stays in the pan for tomorrow. The thick crust stays good for a couple of days and they warm it up. There are also restaurants that serve pizza. Actually, the vast majority of restaurants in Italy serve pizza made to order. You get the pie, not a slice, but often it is a mini-pizza. Finding pizza in Italy is simply walking down the steet and looking for someone that sells some type of food. Odds are they’ll have pizza on one form or another,
